Canning Tomato Sugo
Sun-ripened tomato sugo from the garden - canned and ready for the pantry. Few ingredients, lots of flavor.
Ingredients
- 2 kgripe tomatoes (e.g. beefsteak tomatoes from the garden)
- 1onion
- 3 clovesgarlic
- 2 tbspolive oil
- 1 bunchfresh basil
- 1 pinchsugar
- to tastesalt & pepper
- 4 tbsplemon juice (lowers the pH – important for safe preserving)
Instructions
- Wash the tomatoes and roughly dice them
- Sauté the onion and garlic in olive oil until translucent
- Add the tomatoes and simmer over medium heat for 45 minutes
- Season with salt, pepper, and sugar, then stir in the basil
- Purée finely with an immersion blender
- Stir in the lemon juice, fill into sterilized jars while boiling hot and seal immediately.
- Process the jars for 30 minutes at 90°C / 194°F. Without processing, refrigerate and use within 2 weeks – modern tomato varieties are often not acidic enough for hot-filling alone.
