Canning Beef Goulash
Juicy beef goulash preserved for the pantry - perfect for quick dinners.
Ingredients
- 1 kgbeef (shank or shoulder), cubed
- 500 gonions, roughly chopped
- 2 tbspsweet paprika
- 1 tsphot paprika
- 2 tbsptomato paste
- 200 mlbeef stock
- 2 tbsplard or oil
- to tastesalt, pepper, caraway, marjoram
Instructions
- Sauté the onions in lard until golden brown.
- Sear the meat in batches over high heat, then add to the onions.
- Briefly fry the tomato paste along with it, then stir in the paprika.
- Deglaze with stock and add the spices.
- Simmer over low heat for 60-90 minutes until the meat is tender.
- Fill hot into sterilized canning jars (500 ml) and seal immediately.
- Process in a canning pot or oven at 100°C / 212°F for 90 minutes.
- Process a second time for 90 minutes at 100°C / 212°F after 24 hours – meat does not become sterile at 100°C. Then store cool and dark and use within 6 months; alternatively keep the jars refrigerated or freeze them. Never taste jars with a bulging lid.
