Ingredients

Instructions

  1. Sauté the onions in lard until golden brown.
  2. Sear the meat in batches over high heat, then add to the onions.
  3. Briefly fry the tomato paste along with it, then stir in the paprika.
  4. Deglaze with stock and add the spices.
  5. Simmer over low heat for 60-90 minutes until the meat is tender.
  6. Fill hot into sterilized canning jars (500 ml) and seal immediately.
  7. Process in a canning pot or oven at 100°C / 212°F for 90 minutes.
  8. Process a second time for 90 minutes at 100°C / 212°F after 24 hours – meat does not become sterile at 100°C. Then store cool and dark and use within 6 months; alternatively keep the jars refrigerated or freeze them. Never taste jars with a bulging lid.
