Preserving Zucchini: Canning, Freezing & More

The Zucchini Problem: Too Much at Once

Anyone who grows zucchini knows the drill: either you can't find a single one, or suddenly there are 10 at once. The classic summer dilemma. The solution: preserve them in time.

Method 1: Freezing

The simplest method:

  1. Wash the zucchini, cut into 1–2 cm thick slices or cubes.
  2. Blanch (2 min. in boiling water, then ice water) – optional, but extends shelf life and preserves color.
  3. Pre-freeze on a baking sheet (1–2 hours), then transfer into bags.
  4. Shelf life: 10–12 months in the freezer.

Frozen zucchini works well for soups, casseroles, and sauces – no longer good for salad (it turns soft).

Method 2: Pickled Zucchini Antipasti

Ingredients for 4 jars:

  • 1 kg zucchini (sliced)
  • 200 ml white wine vinegar
  • 200 ml olive oil
  • 2 tsp salt, 1 tsp sugar
  • Garlic, fresh herbs (thyme, oregano), chili to taste
  1. Salt the zucchini slices for 2 hours, then rinse and pat dry.
  2. Sauté in olive oil or roast on the grill.
  3. Layer into jars, alternating with herbs and garlic.
  4. Pour over the vinegar-oil mixture (all slices must be covered).
  5. Seal the jars, let them cool, and put them in the fridge.

⚠️ Important: This does not become a shelf-stable preserve. Zucchini are low-acid, and under a layer of oil there is no oxygen – exactly the environment in which Clostridium botulinum becomes active. Processing at 80 °C changes nothing about that: the spores survive anything below 121 °C. And without measuring the pH, there is no telling whether the vinegar acidifies the whole batch reliably. So these jars belong in the fridge, not in the pantry. Details: "Safe Canning: Avoiding Botulism"

Shelf life: 2–3 weeks in the fridge.

Method 3: Zucchini Jam

Sounds unusual, tastes fantastic:

  • 1 kg zucchini (grated), 500 g 2:1 jam sugar, juice + zest of one lemon, 1 tsp vanilla
  • Mix all ingredients, let sit for 1 hour, then bring to a boil and boil at a rolling boil for 4–5 min.
  • Fill into jars, let cool upside down

Method 4: Drying

  • Thin slices in a dehydrator at 55–60 °C for about 8–10 hours
  • Snack on them as chips or use in winter soups

Zucchini-Mustard Relish

Great as a side for grilled food or with cheese:

  • Roughly dice zucchini + onions + peppers, salt, let sit overnight
  • Rinse, bring to a boil with mustard seeds, turmeric, vinegar, and sugar
  • Fill into jars and process
